Offal is the general term for organs like liver, kidney, heart, tripe, spleen and brain that lie outside an animal's muscle meat; each one carries a different texture, flavour and nutritional value. Liver is rich in iron and vitamin A, while tripe is low in fat but has a dense texture that needs long cooking.

The most commonly used offal in Turkish cooking is liver, tripe, heart and kidney, cooked by sautéing, in soup, or grilled depending on the cut. Offal is usually cheaper than muscle meat, but preparing it well takes more care and proper cleaning; poorly cleaned offal can leave an unpleasant smell even once it's cooked.

What is the nutritional value and use of liver?

Beef and lamb liver are noticeably richer in iron and vitamin A than muscle meat, so even a small portion adds meaningful nutrition. Liver cooks fast, and leaving it on the heat too long turns it tough and rubbery, so it's best cooked over high heat for a short time, usually 3-5 minutes.

Soaking it briefly in milk or water before cooking cuts down on its sharp smell somewhat.

What are the characteristics of tripe?

Tripe has a lower fat content than muscle meat but a tougher, fibrous texture, so it needs a much longer simmer than other offal to soften, typically around 2-3 hours. When making tripe soup, skimming the foam off frequently matters both for a clear broth and a cleaner flavour.

Poorly cleaned tripe can leave a sharp smell even after cooking, so it's worth buying it already cleaned.

How do you prepare heart and kidney?

Heart is dense and lean; before grilling or skewering it, it should be halved and the vessels inside trimmed out. Kidney has a strong smell, and halving it, rinsing it in cold water 1-2 times, and briefly soaking it in vinegar water before cooking cuts that smell down noticeably.

Both toughen quickly if overcooked, so they should be cooked over medium-high heat for a short time.

What should you check for when buying offal?

Fresh offal should look bright in colour, have no dark patches or dried spots, and spring back without leaving a mark when pressed gently; a sharp, sour smell is a sign it's past its best. Offal spoils faster than muscle meat, so it's best cooked the same day it's bought, or the day after at the latest.

If freezing it, package and freeze it the same day, and don't refreeze it once it's been thawed.

What general rules apply when cooking offal?

Quick-cooking offal like liver and heart needs high heat for a short time, while more fibrous cuts like tripe and kidney need low heat for a long time; applying one cooking logic to both toughens the result. Marinating, especially for kidney and heart, both cuts down on the smell and balances the flavour.

Offal is generally recommended in smaller portions than muscle meat; eating it once or twice a week is enough variety for most people.
