Traditional mumbar dolması, a demanding specialty of Southeastern cuisine where lamb intestine is filled with a spiced rice mixture, then boiled and fried. With its richly spiced filling and crispy shell, it is a bold offal delicacy of special-occasion tables.

How to make it?

Clean the intestines

Rub the cleaned large intestines with rock salt and lemon and rinse thoroughly with plenty of water. Turn them inside out so the inner surface faces outward and rinse once more, then drain.

Prepare the filling

Heat the oil in a pan and sauté the chopped onions, add the tomato and pepper paste and stir until fragrant. Add the washed rice, red pepper flakes, black pepper, allspice, and salt and sauté for 3 minutes, then let cool slightly.

Fill the intestines

Loosely stuff the filling into the intestine casing, accounting for the rice's expansion. Tie off at intervals or knot the ends with kitchen string to close. Important: Do not stuff tightly, or it will burst while cooking.

Boil in spiced water

45 min

In a large pot, drop the mumbar into boiling water seasoned with a spoonful of tomato paste and salt. Simmer over low heat for about 45 minutes until the rice inside softens. Pierce the boiled mumbar in a few places with a needle.

Fry and serve

15 min

Heat the oil in a pan and fry the boiled mumbar until browned on all sides. Caution: Make sure the filling and the casing are completely cooked through. Slice and serve hot.

Reminder

Important: Don't pack the intestine too tightly when filling it; the rice swells as it boils, and an overfilled mumbar will burst. Tie the ends securely with string or seal with toothpicks. Caution: Both the offal and rice must be fully cooked; boil the mumbar in spiced water until the rice softens, then fry. Contains a spicy, seasoned filling. Contains no nuts, gluten-free.

The tomato paste and spices added to the boiling water flavor the intestine from the outside as well. If you prick the mumbar in a few places with a needle after boiling and before frying, the steam trapped inside escapes and it won't burst while frying.
