How Long Do Dairy Products Keep in the Fridge?

How long an opened dairy product lasts in the fridge depends on its water content and whether it carries a live culture. Opened milk generally keeps 5 to 7 days, yoghurt 1 to 2 weeks, and ayran 3 to 4 days once opened; higher-fat products like kaymak and cream can last a little longer. These windows are counted from the moment the product is opened, not from its production date.

These times assume the product is kept sealed, below 4°C, in a stable part of the fridge; storage in the door, where temperature fluctuates, shortens them. That's why dairy is best kept on the lower shelves, which stay coldest and most consistent.

How can you tell when milk has gone off?

Spoiled milk first develops a faint sour smell, then the texture begins to curdle; if it's heated and separates into visible clumps, that's a clear sign it's gone off. These clumps form because the milk's protein breaks down under acidity and can't be reversed.

Colour change is usually the last sign to show, so judging freshness by appearance alone can be misleading. Because consuming spoiled dairy can cause food poisoning, milk should be discarded at the first suspicious change in smell or texture.

Why does yoghurt keep longer than milk?

The live bacterial culture in yoghurt makes the environment acidic, and that acidity slows the growth of harmful bacteria, which is why yoghurt outlasts opened milk. This protective effect comes from the yoghurt's own culture competing with other microorganisms for the same space.

The yellowish liquid that collects on top isn't spoilage — it's whey, and it can be stirred back in and eaten. That liquid is actually a sign the yoghurt carries a live culture and hasn't been over-thickened industrially.

Why should ayran and kefir be used up sooner?

Ayran is a diluted form of yoghurt, so it's less dense, which makes it easier for bacteria to multiply; that's why it's best used within a few days of opening. The more diluted it is, the faster it tends to turn.

Kefir, being a live drink that keeps fermenting, will naturally get more sour and slightly fizzy over time even in the fridge; that's ongoing fermentation, not spoilage. A slightly bulging lid can be a normal result of that natural gas buildup.

How do kaymak and cream behave differently?

High-fat dairy products like kaymak and cream have low water content, which makes them less hospitable to bacteria, so they typically keep for 7 to 10 days without spoiling. That longer life comes from the fat limiting the moisture bacteria need to grow.

But these products pick up odours easily, so they should be kept sealed and away from strong-smelling foods in the fridge rather than sitting open next to them. Left uncovered, kaymak can pick up the smell of nearby onion or spices within just a few hours.
