A medium-thick (2 cm) chicken breast grilled over medium-high heat takes 5-6 minutes per side, for a total of 10-12 minutes; it is done once the internal temperature reaches 74°C.

Why Does Chicken Breast Dry Out So Easily?

Chicken breast is a very lean cut, so it loses moisture fast if overcooked on the grill, leaving a stringy, dry texture; even a couple of extra minutes can make a difference. That is why checking with a thermometer is far more reliable than guessing by eye.

Does Pounding It Flat Change the Timing?

Pounding a chicken breast to an even thickness shortens the cooking time and, more importantly, makes it cook evenly; an unpounded breast can dry out at the thin end while the thick end is still raw. A pounded breast can be ready on the grill in 7-9 minutes.

Does Marinating Change the Time?

Marinating does not change the cooking time, but it boosts the meat's ability to hold onto moisture, acting as a buffer against drying out; chicken breast marinated for at least 30 minutes, or ideally 2-4 hours, stays juicier on the grill.

Does Bone-In Chicken Breast Take the Same Time?

Bone-in, skin-on chicken breast takes much longer than a boneless fillet; over indirect heat on the grill it needs 25-30 minutes, since bone slows down the heat and the piece is thicker overall.

How Should You Set the Grill Temperature?

Very high heat can char the outside quickly while leaving the inside raw; medium-high heat, around 200-220°C, gives good browning on the outside with even cooking inside. Chicken left directly over the flame can burn within 2-3 minutes.

Does It Need to Rest?

Chicken breast off the grill should rest for 5 minutes before slicing; that rest lets the juices redistribute through the meat. Sliced straight away, it loses its juices onto the plate and eats drier.

Can Frozen Chicken Breast Go Straight on the Grill?

Frozen chicken breast put straight on the grill runs a high risk of burning outside while staying raw inside; thawing it overnight in the fridge beforehand is the safer approach. Thawed chicken breast cooks in the usual 10-12 minutes.

Does Pan-Frying Follow the Same Rule?

Chicken breast cooked in a pan should still reach the same internal temperature target (74°C), but the time is a little shorter; over medium heat with a lid on, 8-10 minutes is usually enough, since the heat spreads more evenly than on a grill.

Does a Sugary Marinade Change the Timing?

Chicken marinated with honey or molasses browns faster on the grill because of its higher sugar content; to keep the outside from charring, it helps to lower the heat slightly and add 2-3 minutes to the time. Marinades without sugar carry much less of this risk.

Does Chicken Thigh Cook in the Same Time?

Boneless chicken thigh takes a little longer than breast because the muscle is denser; 12-14 minutes on the grill is usually enough. Thigh also has more fat, which makes it a bit more forgiving against drying out than breast.
