Homemade Adana kebab, made by spreading minced meat blended with tail fat onto skewers and grilling it over fire, carrying the spicy aroma of the embers. Served with lavash, grilled peppers and onion salad, it is this fiery classic of Southeastern cuisine.

How to make it?

Knead the mixture

Combine the ground meat, finely chopped tail fat, ground red pepper, red pepper flakes, crushed garlic, salt, and black pepper in a large bowl. Knead by hand for 10 minutes until the mixture reaches a paste-like consistency and the fat is fully combined with the meat.

Let the mixture rest

30 min

Cover the kneaded mixture with plastic wrap and let it rest in the refrigerator for 30 minutes. Chilled mixture sticks to the skewers more easily and holds together better while cooking.

Spread onto the skewer

10 min

With wet hands, press portions of the mixture onto flat, wide skewers, shaping them into a thin, long, even layer. Keep the thickness even throughout so it cooks evenly.

Cook over charcoal

15 min

Cook the kebabs over glowing charcoal, turning occasionally. Caution: Both sides must brown and the meat must be fully cooked, reaching an internal temperature of 71°C (160°F); the inside of the mixture should not remain pink. It takes about 12-15 minutes to cook.

Serve

5 min

Char the long green peppers over the same fire, and rub the onion with sumac. Place the kebab on hot lavash bread and serve with the charred peppers and sumac-rubbed onion.

Reminder

Important: For the right consistency in Adana kebab, the fat ratio of the ground meat and thorough kneading are essential; resting the mixture in the refrigerator for 30 minutes makes it easier to mold onto the skewer. Caution: Don't taste the raw kebab mixture, which contains red meat; once cooked, the ground meat's internal temperature should reach 71°C (160°F). If you don't like spice, you can reduce the red pepper flakes or leave out the hot pepper. Contains no nuts, gluten-free.

If you don't have a skewer, you can spread the mixture into a flat rectangle on a baking tray and cook it in a 200°C oven, turning on the top grill for the last few minutes to mimic the char-grilled effect. If you're using skewers, use flat, wide ones — the mixture falls off thin skewers.
