Chicken breast turns dry and stringy when cooked because this cut has very little fat, and once the internal temperature crosses a certain point, the protein fibres tighten and squeeze out the moisture inside. Red meat has connective tissue and fat that help balance this out; chicken breast has almost none of either.
What speeds up the drying out?
The difference between the thin and thick ends of the breast is a major factor; by the time the centre of the piece is properly cooked, the thin ends may already be overdone, which is why parts of the same piece can end up dry while others are still undercooked. Continuing to cook past an internal temperature of 74°C also makes the proteins tighten more than necessary, driving out a large amount of moisture.
Chicken breast cooked without brining or marinating loses more of its water to the proteins tightening; salt is known to loosen proteins slightly and improve their ability to hold onto water. Skipping this step means the same cooking time leaves the meat noticeably drier.
What gives a juicier result?
Pounding the meat to an even thickness before cooking removes the gap between the thin and thick ends, letting the whole piece reach the right temperature at the same time. Monitoring the internal temperature with a thermometer during cooking gives a far more reliable result than judging by eye; the meat should come off the heat the moment it reads 74°C.
A short fifteen- to thirty-minute salt-water brine, or a marinade with a little yoghurt, lemon or oil, helps the meat hold onto more moisture as it cooks. Letting the meat rest for a few minutes instead of slicing it right away also lets the moisture inside the fibres redistribute, so less escapes when it is finally cut.
Cooking at medium heat for a bit longer instead of blasting it on high also keeps the proteins from tightening suddenly and harshly; a sudden burst of high heat makes the fibres contract abruptly and push out water all at once, while a more gradual rise softens that effect.
Bone-in, skin-on breasts hold onto moisture for longer while cooking than boneless, skinless fillets; the skin and bone act as a natural barrier that slows the heat down a little, helping the meat cook more gradually and evenly. That is why the same recipe cooked with and without skin can end up with a noticeably different level of juiciness.
Cooking chicken breast straight from frozen without thawing it first also increases dryness; while the outside cooks, the inside is still frozen, so the outer layer is exposed to heat for far longer than it should be and loses extra moisture in the process. That is why chicken breast is best thawed completely in the fridge before cooking.
The cooking method matters too; breast baked with dry heat in the oven generally dries out faster than breast steamed or cooked with a little sauce, since there is no extra source of moisture to make up for what is lost. That is why oven-baked chicken breast is usually served with some kind of sauce or fat alongside it.
