How to Store Fresh and Dried Yeast, and When It Goes Weak

Fresh yeast and dried yeast have different shelf lives and different storage needs, and treating them the same way is one of the most common reasons dough refuses to rise. Fresh yeast keeps for 2 weeks in the fridge and up to 3 months in the freezer, while an unopened packet of dried yeast lasts around a year at room temperature.

Once a packet of dried yeast is opened, it should go into an airtight container in the fridge and be used within 3 to 4 months; left open at room temperature, dried yeast loses most of its strength within a few weeks.

How should fresh yeast be stored?

Fresh yeast keeps for 2 weeks in the fridge if it's wrapped tightly; for longer storage, break it into small pieces and freeze it, which extends its life to up to 3 months. Frozen fresh yeast should be thawed slowly in the fridge rather than at room temperature, since a fast thaw weakens its cells.

If fresh yeast turns grey or develops a dry crust on the surface, it's past its best, and its ability to raise dough will have dropped considerably.

How should dried yeast be stored?

An unopened packet of dried yeast keeps for about a year in a cool cupboard at room temperature; once opened, it should move to an airtight container in the fridge and be used within 3 to 4 months. Leaving opened dried yeast out on the counter instead of the fridge lets it pick up moisture and lose its strength quickly.

Dried yeast can also be frozen — stored that way, it holds most of its strength for around 2 years.

How can you tell if yeast has lost its strength?

To check whether yeast is still active, mix it into warm water (around 38-40°C) with a pinch of sugar and wait 10 minutes; foam on the surface means it's alive. No foam after 10 minutes means the yeast has lost its strength and the dough won't rise.

Water that's too hot — above about 60°C — kills yeast instantly, so the water for this test only needs to feel warm on your skin, not hot.

What happens to dough made with weak yeast?

Dough made with yeast that's lost its strength barely grows during proofing and comes out of the oven dense and flat instead of risen. In that case, the problem isn't the recipe — it's that the yeast used had already gone stale.

As yeast weakens, the time dough needs to rise stretches out noticeably too; dough that should double in an hour might not reach the same size even after 3 hours with weak yeast.

Can fresh and dried yeast substitute for each other?

Fresh and dried yeast aren't interchangeable in equal amounts; dried yeast is more concentrated, so a recipe usually calls for roughly half the amount compared with fresh. Using one in place of the other without adjusting the amount can leave dough under- or over-proofed.

Storing either type the way you'd store the other backfires too — leaving fresh yeast out in a cupboard the way you might with dried, or keeping dried yeast somewhere damp the way fresh yeast needs, makes both lose their strength far sooner than expected.
