The strawberry tree fruit ripens to red in the scrub-covered hills of the Aegean and Mediterranean in late fall. It has a pebbly skin, soft flesh, and tiny seeds; it should not be confused with karayemiş (taflan), the cherry laurel fruit of the Black Sea region. Because of its gritty skin, this preserve is made from cooked fruit purée pressed through a sieve. The fruit is sweet but mild, so lemon juice brightens the flavor and helps the pectin set.

How to make it?

Sort the fruit

Spread the strawberry tree fruit on a large tray and remove the stems and leaves. Discard any fruit that collapses when pressed, is darkened, or smells sour. Ripe fruit is deep red and soft but still holds its shape. Rinse gently in cold water and drain.

Soften the fruit

20 min

Put the fruit in a pot with 250 ml water. Cover and cook over medium heat for 15 minutes. Remove from the heat when the fruit crushes easily against the back of a spoon.

Press through a sieve

20 min

While hot, transfer the mixture to a fine-mesh sieve and press it through with a spoon. The gritty skin and tiny seeds will remain in the sieve, while a smooth orange-red purée passes through. Scrape the thick purée from the underside of the sieve as well. You should have about 800 g purée.

Cook with the sugar

25 min

Put the purée and sugar in a wide pot and stir over low heat until the sugar dissolves. Increase the heat and boil for 20 minutes, stirring constantly; the purée will splatter as it thickens, so use a long-handled wooden spoon. Add the lemon juice. Remove from the heat when the preserve reaches 104–105°C / about 220°F or wrinkles when you push a spoonful on a cold plate.

Fill and process the jars

While the preserve cooks, wash the jars and lids in hot, soapy water, then boil them for 10 minutes. Keep them in hot water until ready to fill. Ladle the hot preserve into the hot jars, leaving 0.5–1 cm headspace. Wipe the rims with a clean, damp cloth and seal. For jars intended for pantry storage, process them with the lids on in a boiling-water bath for 10 minutes.

Reminder

Use only dark red, softened strawberry tree fruit. Orange, firm fruit will remain unripe and taste astringent and sour after cooking. The jars may take several hours to cool and for their lids to pull inward; this waiting time is not included in the recipe duration.
