Sambal, an essential fiery sauce at Malaysian tables, is made by air-frying red bell pepper, onion, and garlic, then blending them with tamarind. Roasting concentrates the ingredients’ flavors and adds depth to the sauce.

Step by Step

How to make it?

1

Roast the Vegetables

12 min

Coat the red bell pepper, hot pepper, onion, and garlic cloves with olive oil and arrange them in the air fryer basket. Roast at 200°C / 390°F for 12 minutes, until the edges are charred. If you do not have an air fryer, roast them in an oven at the same temperature for 12 minutes.

2

Blend

5 min

Blend the roasted vegetables with the tamarind paste until smooth.

3

Season in a Skillet

8 min

Transfer the sauce to a skillet, add the sugar and salt, and simmer over low heat for 8 minutes.

Reminder

Remove the hot pepper seeds for a more manageable level of heat. If you do not have an air fryer, you can roast the ingredients in an oven at the same temperature for 12 minutes.
