This preserve is made by first roasting dried apricots in an air fryer to concentrate their aroma, then simmering them for a long time in sugar water. It makes a thick, intensely flavored jarred treat even when fresh apricots are out of season.

Spread the drained apricots in the air fryer basket and roast at 170°C / 340°F for 8 minutes, until the edges are lightly charred. If you do not have an air fryer, roast them in an oven preheated to 170°C / 340°F for the same amount of time.
Put the roasted apricots in a pot with the water and granulated sugar. Simmer over low heat for 22 minutes, until thickened. Add the lemon juice during the final 2 minutes.
While hot, transfer the jam to clean jars and close the lids tightly. Let cool at room temperature.
Be sure to soak the dried apricots in warm water overnight before boiling; if they have not softened first, the preserve may stay unpleasantly hard.
Kaynatma süresini tarifte yazan 22 dakika yerine 15 dakikada kesmişim, kavanoza koyduktan sonra sıvı fazla akışkan kaldı ve tabana çöktü. Kapağı açıp tekrar birkaç dakika kaynatınca kıvamı düzeldi.
