Alcha jam is a thick winter preserve made by simmering Georgia’s tart cherry plum variety with sugar until thickened. The fruit’s pronounced tartness gives the jam a balanced sweetness even with little sugar.

How to make it?

Prepare the Plums

Place the pitted plums and water in a pot and boil over medium heat for 10 minutes.

Thicken with Sugar

20 min

Add the sugar and cook over low heat for 20 minutes, stirring constantly, until thick.

Fill the Jars

5 min

Fill clean jars with the hot jam and leave it to cool.

Reminder

Keep stirring, as the thickening mixture can stick to the bottom of the pot and burn. Remove the pits before cooking; otherwise, the jam may taste bitter. This recipe contains none of the major allergens.
