Pastries and dough-based dishes
Made with almond flour instead of wheat flour, these savory rolls are a good way to use up leftover cheese from the refrigerator. The flourless dough makes a snack suitable for people following ketogenic and diabetes-friendly diets.
Knead the almond flour with the egg, baking powder, salt, and olive oil until you have a soft dough.
Add the crumbled leftover cheese and chopped parsley to the dough and knead until evenly distributed.
Pinch off small balls of dough and arrange them on a baking pan. Bake in an oven preheated to 175°C / 345°F for 20 minutes, until lightly browned on top.
Almond flour dough is not as elastic as wheat flour dough, so do not try to roll the balls too thin or they will break. Allergens: contains tree nuts (almonds), egg, and dairy (cheese).
