Cut the chicken breast into bite-size cubes and season them with salt and black pepper.
Dip the chicken pieces in the beaten egg and coat them with almond flour. Aim for a thin, even coating because almond flour can brown quickly.
Cook the pieces in an olive-oil-coated skillet over medium heat for 3 minutes per side, 12 minutes total, until golden without burning the almond flour.
Almond flour browns much faster than breadcrumbs, so keep the heat at medium and check the chicken often. Contains tree nuts (almonds) and egg.
