Heat the oil and sauté the onion for 8 minutes, until golden. Add the garlic and turmeric and cook for 1 more minute without letting them burn. Add the tomato and red chili and cook for 15 minutes, until the sauce thickens.
Add the eggs and salt to the sauce and cook over low heat for another 6 minutes. Garnish with cilantro and serve.
Pierce the eggs a few times with a fork before adding them to the sauce so the flavors can penetrate. Do not let the turmeric burn while toasting it in the oil, or it will taste bitter. Allergen: contains eggs.
