Process the Apricots and Hazelnuts
5 minPulse the dried apricots and toasted hazelnuts in a food processor, leaving some coarse pieces.
These energy balls are made with dried apricots, hazelnuts, and oats, sweetened only with honey, while cinnamon adds a touch of warmth. This easy no-bake snack, with heart-healthy fats and fiber, is a lunchbox favorite.
Pulse the dried apricots and toasted hazelnuts in a food processor, leaving some coarse pieces.
Add the oats, cinnamon, and honey to the processed mixture. Knead until it forms a sticky dough.
Shape the mixture into balls about 3 cm in diameter and chill for at least 30 minutes. This helps the balls hold their shape without falling apart.
If the mixture feels too sticky, add a few drops of water and continue kneading. If it is too dry, the balls may fall apart. Allergens: Contains hazelnuts (tree nuts). Check the oat package for a gluten statement; contents can vary by product.
