This jam is made by simmering overripe figs that have been kept in the refrigerator with sugar. It comes from an Argentine tradition of preserving ingredients to reduce waste. Serve this simple, nut-free jam with crackers or toast as a snack.

How to make it?

Prepare the figs

Quarter the ripe figs and mix them with the sugar and lemon juice.

Let the figs macerate

Cover the mixture and let it stand for 15 minutes, until the figs begin to release their juices.

Simmer the jam

30 min

Transfer the mixture and cinnamon stick to a saucepan and bring it to a boil. Reduce the heat and cook for 30 minutes, stirring occasionally, until thickened.

Fill the jars

Remove the cinnamon stick and fill clean jars with the jam while it is hot.

Reminder

The riper the figs, the sweeter the jam; adjust the sugar accordingly. Stay by the pot while it simmers, as the fig syrup can foam and boil over.

İncirler çok olgundu diye şekeri biraz azaltmıştım ama reçel yeterince koyulaşmadı, 30 dakika yerine 45 dakika kaynatmak zorunda kaldım. Sonunda tadı güzel oldu ama beklediğimden çok daha uzun sürdü.

Haklısınız, şekeri azaltmak koyulaşma süresini uzatır çünkü şeker suyu bağlamaya yardımcı olur. Bir dahaki sefere limon suyunu biraz artırmanızı öneririm, pektin etkisiyle kıvamı hızlandırır.
