Cook the Lentils

Arishta is a traditional Armenian one-pot dish made by cooking thin homemade noodles with red lentils and topping them with sautéed onions. Timing matters so the noodles and lentils finish cooking together. It also tastes good cold, making it suitable for a lunchbox the next day.
Bring the red lentils, water, and salt to a boil in a pot, then cook for 10 minutes.
Add the noodles to the boiling lentil liquid and cook for 8 more minutes, until al dente.
Heat the olive oil in a skillet and sauté the thinly sliced onion until deep golden brown.
Drain the noodles and lentils, divide among plates, and top with the sautéed onion.
Add the noodles only after the lentil liquid is boiling so they do not clump; adding them to lukewarm water can make them stick together. Allergen: contains wheat (gluten) in the noodles.
