Ashura is a traditional Turkish dessert associated with Muharram, made with wheat, chickpeas, dried beans, dried fruit, and nuts. This generous, many-ingredient dessert is shared at large gatherings.
Boil the wheat, chickpeas, and dried beans, all soaked overnight, in separate pots until tender.
Put the cooked wheat, chickpeas, and beans in a large pot with water. Add the dried apricots, figs, and raisins, then bring to a boil.
Add the sugar and cook over low heat, stirring often, until the mixture thickens to a loose, pudding-like consistency.
Divide the ashura among bowls and let it cool to room temperature. Sprinkle with walnuts, hazelnuts, optional pomegranate seeds, and cinnamon, then serve cold.
Soak the wheat in plenty of water overnight; otherwise, it will take longer to cook and may remain firm. Allergens: contains wheat (gluten), hazelnuts, and walnuts. It can be stored for four days in a covered container in the refrigerator.
