A classic for asparagus season in English cuisine, this dish pairs briefly boiled asparagus with hollandaise made from egg yolks and butter whisked over a double boiler. The sauce requires careful temperature control to come together.

Boil the Asparagus

Snap off the woody ends of the asparagus and boil it in salted water for 4 minutes.

Make the Hollandaise

Whisk the egg yolks over hot water in a double boiler. Slowly add the melted butter and continue whisking for 5 minutes, until the sauce thickens.

Season the sauce with lemon juice, salt, and black pepper, then pour it over the boiled asparagus and serve.

Reminder
