This Austrian classic, known as Grießbrei, becomes a soft porridge for babies by cooking fine semolina in milk and topping it with grated apple. With no added sweetener, it takes its natural sweetness from the apple.
Bring the milk to boiling point in a saucepan over low heat, stirring constantly to prevent it boiling over.
Slowly sprinkle the semolina into the boiling milk to prevent lumps. Cook over low heat for 8 minutes, stirring constantly, until thickened to a porridge consistency.
Remove from the heat and stir in the butter. Cover and rest off the heat for 10 minutes, allowing the semolina to absorb the liquid and soften.
Add the grated apple to the porridge and stir gently. Once lukewarm, spoon-feed it to your baby.
