This Colombian-inspired sauce is made by mashing avocado and mixing it with cooked quinoa, lemon, and cilantro. Getting the quinoa mashed to the right consistency takes practice, so the ingredients should be combined gradually.

Step by Step

How to make it?

1

Cook the quinoa

15 min

Bring the rinsed quinoa and water to a boil, then cook over low heat for 15 minutes. Let it cool.

2

Mix

15 min

Mash the avocado and gradually mix in the cooked quinoa, lemon juice, cilantro, olive oil, and salt until the mixture reaches a sauce-like consistency.

3

Serve

15 min

Prepare it just before serving and serve with toasted slices or vegetables.

Reminder

Be sure to rinse the quinoa before cooking, or its natural coating may leave a bitter taste. Mash the avocado just before serving, or it will darken when exposed to air. No common allergens are listed for this recipe.
