Winter quince meets cinnamon sticks and cloves in this classic Turkish preserve. Its characteristic pink color is the reward for long, patient cooking.

How to make it?

Bring to a boil

Combine the diced quince, sugar and water in a saucepan and bring to a boil.

Add the spices

20 min

Add the cinnamon stick and cloves and cook over low heat for 20 minutes, stirring.

Add the lemon juice

5 min

Add the lemon juice and cook for a further 5 minutes.

Fill the jar

5 min

Remove the cinnamon stick and cloves, then spoon the jam into a jar.

Reminder

Quince takes time to turn pink. Do not turn up the heat to hurry it along, or it will stay pale yellow.
