A side dish of sweet potatoes cut into even sticks, lightly coated with starch, then baked until crisp. Sweet potatoes contain more sugar than regular potatoes and brown more quickly, so the cut thickness and spacing on the tray are just as important as the recipe itself. There is no frying oil; the crispness comes from the starch coating.

Peel and cut evenly

Peel the sweet potatoes and cut them first into 1 cm-thick slices, then into 1 cm-wide sticks. Keep the sticks no longer than 6–7 cm so they fit in a child’s hand. Cutting them to an even thickness is the only tricky part: thinner sticks will darken while thicker ones remain undercooked. Immediately place the cut sticks in a bowl of cold water.

Drain and dry the sticks

Drain the sticks from the cold water and shake off the excess. Spread them in a single layer on a cloth towel, cover them with another towel, and press gently. They are dry when their surfaces look matte; if they still look shiny, moisture remains, so repeat the process.

Coat with starch and oil

Put the sticks in a wide bowl. Sift the cornstarch over them and shake the bowl until each side has a thin dusting. Add the olive oil, salt, sweet paprika, and thyme, then toss by hand from the bottom up. No dry starch should remain at the bottom of the bowl.

Arrange in a single layer and bake

Arrange the sticks in a single layer on two parchment-lined baking sheets, leaving a finger-width gap between them. Trying to fit everything on one sheet is the most common mistake with this recipe. Bake on the middle rack of an oven preheated to 220°C / 430°F for 20 minutes.

Turn and finish baking

Remove the sheets from the oven, turn each stick with tongs, and bake for 10–12 minutes more. The coating is set when the edges are deep orange and a stick stays upright without drooping when lifted with the tongs.

Adjust the salt and cool slightly

As soon as the fries come out of the oven, sprinkle on the remaining salt and shake the tray; salt added while they are hot will stick to the surface, while salt added after cooling will fall to the bottom of the plate. Let them cool for 3 minutes before serving to a child.

Reminder

Soak the cut sticks in cold water for 30 minutes; this resting time is not included in the cooking time. The surface starch must dissolve into the water, or the sticks will stick together on the baking sheet. If you oil them before drying them with a cloth towel, they will steam instead of browning in the oven.
