These rolls are made by wrapping leftover white cheese mixed with egg and parsley in thin Turkish pastry sheets (yufka), then baking them. Inspired by Balkan pastry-making traditions that reduce food waste, they work equally well for breakfast or afternoon tea.
Mix the crumbled Turkish white cheese with one egg and parsley.
Place a strip of filling along the edge of each yufka sheet, roll it loosely, then arrange the rolls in a curve in a baking dish.
Beat the remaining egg with the milk and cooking oil, then pour it over the rolls. Leave them to stand for 15 minutes.
Bake in an oven preheated to 180°C / 355°F for 45 minutes, until golden on top.
Do not roll the yufka sheets too tightly; they expand slightly as they bake, and tightly rolled pastries may crack. Allergens: wheat (gluten), milk and dairy (white cheese), and egg.
