A heart-healthy Iraqi breakfast classic, bayd bil basal is made by caramelizing plenty of onions with turmeric and cumin, then lightly cooking eggs cracked over the top in an air fryer. This simple version uses only the onions’ natural sweetness, without an extra sauce.

How to make it?

Caramelize the onions

Cook the thinly sliced onions in olive oil with the turmeric and cumin over low heat for 20 minutes, stirring often, until deep golden brown.

Transfer to an air fryer-safe dish

Transfer the caramelized onions to a small dish suitable for the air fryer, and season with salt and black pepper.

Add the eggs and cook

Crack the eggs over the onions and cook in an air fryer at 180°C / 355°F for 8 minutes. If you do not have an air fryer, bake in an oven preheated to 180°C / 355°F for the same amount of time.

Serve

Sprinkle with parsley and serve hot.

Reminder

Caramelize the onions slowly over low heat; trying to speed things up over high heat may burn them and make them bitter. Allergen information: Contains eggs.

Soğanı 20 dakika yerine 15 dakikada karamelize ettim, tatlılığı tam oturmadı ve hafif ham bir tat kaldı; airfryer'da yumurta güzel piştiyse de soğan biraz daha uzun pişirilmeliymiş.
