Make the walnut paste
15 minProcess the walnuts and peeled garlic cloves into a smooth paste. Getting the right consistency takes time and care.
Bazhe is a Georgian cold sauce thickened with walnuts, traditionally served over leftover cold poultry. Ground coriander and cinnamon give it a warm, spiced depth, and it is also suitable for a ketogenic diet.
Process the walnuts and peeled garlic cloves into a smooth paste. Getting the right consistency takes time and care.
Mix the ground coriander, cinnamon, ground red pepper and salt into the walnut paste.
Gradually add the pomegranate juice and lukewarm water until the sauce has a pouring consistency. Adjust the salt to balance the flavor.
Add the water a little at a time; pouring it all in at once can make the sauce too thin and ruin the texture of the walnut paste. Allergen: contains tree nuts (walnuts).
