This winter one-pot dish brings diced beef together with leeks; olive oil and rice give it a light yet hearty consistency. It can be served warm or cold and is a practical main course for winter.
Sauté the diced beef in olive oil until its liquid has evaporated and it is lightly browned.
Add the finely chopped onion and carrot and sauté them together for a few minutes.
Add the washed leeks and stir until they begin to soften.
Add the rice and hot water, then add the salt. Cover and cook over low heat.
Important: Wash the sliced leeks thoroughly in plenty of water, as dirt can collect between the leaves. Note: Adding the rice late lengthens the cooking time; add it once the leeks begin to soften.
