Prepare the Heart
10 minTrim the beef heart and cut it into cubes.
Beef heart shashlik is a classic Uzbek offal dish made by marinating cubed beef heart for an extended time in a vinegar and onion mixture, then grilling it on skewers over an outdoor grill. The long marinade noticeably tenderizes the heart’s fibrous texture.
Trim the beef heart and cut it into cubes.
Thinly slice the onion into half-moons and mix it with the vinegar, cumin, salt, and black pepper.
Marinate the heart cubes in the onion mixture in the refrigerator for at least 60 minutes.
Thread the marinated heart cubes onto skewers.
Grill the skewers over hot coals for 15 minutes, turning them occasionally until browned on all sides.
Marinate the heart for at least 60 minutes; a shorter marinade can leave the meat tough. Turn the skewers frequently while grilling, or the outside may burn while the inside remains raw.
