A classic Azerbaijani dish made with thin dough, qutab is filled with ground beef and cooked on an ungreased griddle. A practical snack for gatherings, it gets a bright flavor from sumac and mint.
Knead the flour, water, and salt until smooth.
Cover the dough with plastic wrap and let it rest for five minutes.
Mix the ground beef, onion, mint, sumac, and salt.
Roll the dough into thin rounds and spread the filling over one half of each. Fold the dough over and press the edges together to seal into a half-moon shape.
Cook the qutab on an ungreased griddle or in a pan for 6 minutes per side.
Drizzle the hot qutab with melted butter and serve.
Remember to dust the dough with flour as you roll it thin, or it may stick and tear. Allergens: contains gluten (flour) and dairy (butter).
