Pizza and Turkish flatbreads
This pide is made with thinly rolled yeasted dough topped with sliced beef sucuk, a Turkish spiced sausage, and plenty of kashar cheese. Baked at high heat, it is served with crisp edges and a center full of melted cheese.
Dissolve the yeast and sugar in warm water. Add the flour and salt, then knead with the olive oil into a soft dough. Cover and let rise in a warm place until doubled in size.
Shape the risen dough into a long, thin boat. Arrange the tomato slices, beef sucuk, and grated kashar cheese on top. Fold the edges inward and brush the folded rim with egg yolk.
Bake in an oven preheated to 240°C / 465°F for 12 to 15 minutes, until the kashar has melted and the edges are golden. Slice and serve hot as soon as it comes out of the oven.
Let the dough rise in a warm place; a cold environment slows rising and can make the pide tough. Allergen: contains gluten (flour), dairy (kashar cheese), and egg yolk.
