Bird-shaped dumplings are one of the most skill-intensive versions of the manti tradition. The dough is cut into tiny squares, and each one is pinched into a bird shape with your fingertips. Shaping hundreds of little pieces by hand takes hours, so this dish is usually made for special gatherings and large evening meals.

Rest the Dough

Knead the flour, egg, salt, and water as needed into a firm dough. Cover and let rest for 20 minutes.

Prepare the Filling

Knead the ground beef and grated onion together to make the filling.

Shape the Dumplings

Roll the dough thin and cut it into small squares. Place a pinch of filling in the center of each square and pinch the corners together with your fingertips to form a bird shape.

Boil and Serve

8 min

Boil the dumplings in salted boiling water in several batches for 8 minutes, then drain. Serve drizzled with garlic yogurt, melted butter, and red pepper flakes.

Reminder

Do not crowd the pot when boiling the dumplings; they may stick together and lose their shape. Boil them in several batches. Allergen: contains wheat (gluten), dairy, and eggs.
