The secret to this Bodrum-style octopus stew is in the first step: do not add water. As the octopus heats in a covered pot, it releases its own liquid and tenderizes in it. Adding water dilutes the flavor and can make the octopus rubbery. The pearl onions cook whole and stay intact, while tomato paste and apple cider vinegar thicken the sauce.

Cook the octopus without water

Place the cleaned octopus in a heavy-bottomed pot, cover it, and set it over low heat. Do not add water, oil, or salt. Within 10 minutes, the pot will begin to fill with the octopus’s own liquid. Cook for about 35 minutes, until a fork inserted into the thickest part of a tentacle meets no resistance.

Sauté the onions

Transfer the octopus and its liquid to a bowl, then cut the tentacles into 4 cm pieces. Heat the olive oil in the same pot and cook the peeled pearl onions whole, turning them until lightly browned on all sides. Add the crushed garlic during the last 30 seconds.

Add the tomato paste and tomato

Add the tomato paste and cook for 1 minute to remove its raw taste. Add the peeled, diced tomato and cook for 4 minutes, until it releases its liquid.

Return the octopus to the pot

Add the octopus pieces and reserved cooking liquid back to the pot. Stir in the apple cider vinegar, bay leaf, cinnamon stick, and black pepper.

Cook until thickened

30 min

Leave the lid halfway open and simmer over low heat. The stew is ready when the sauce has reduced by half, olive oil has risen to the surface, and the bottom of the pot briefly shows when you drag a spoon through it. Add salt at this stage and taste.

Reminder

Add the salt at the very end. Octopus retains salt water, and salting it at the start can make it release its liquid too early and become tough. Allergen: contains octopus, a mollusk.
