A roast served at Cuban celebrations, boliche is made by filling a whole piece of beef with smoked sausage and cooking it in a tomato-paste sauce. Pressure-cooking shortens the traditional long cooking time while making the meat just as tender.
Cut lengthwise into the middle of the beef to make a pocket. Insert the smoked sausages and tie with string.
Sear the beef in olive oil until browned on every side.
Add the onion, garlic, tomato paste, bay leaf, cumin and meat stock. Close the lid and cook for 22 minutes.
Rest the meat, remove the string, then slice and serve with its sauce.
Do not tie the meat too tightly, or the sausage may push out as it cooks.

Füme sosis bulamadığım için normal sosisle denedim, tat biraz daha hafif kaldı ama yine de güzeldi. Et suyunu da tavuk suyuyla değiştirdim, sos daha az yoğun oldu ama sorun olmadı.
