Bosnian borek is a ground meat pie made by rolling thin phyllo-style yufka into long logs and arranging them in a spiral in a baking pan. Unlike kol böreği (straight-row borek), the logs are arranged in a spiral rather than in straight rows. This lets the inner coils steam and stay soft while the outer ones brown, giving the pan two textures. Roll the logs thinly; a thick coil will stay raw in the center.

Sauté the filling

Finely chop the onion and sauté it in vegetable oil until softened. Add the ground beef and sauté for 9 more minutes, until it releases and reabsorbs its juices. The filling is ready when no liquid runs to the bottom as you tilt the pan; a watery filling will soak the yufka from the inside. Add the spices after removing the pan from the heat, then spread the filling on a wide plate to cool.

Cut the yufka into strips

Stack the yufka sheets and cut them in half across the middle, then cut each half once more to make long strips 12 cm wide. Cover the cut strips with a damp cloth; uncovered yufka dries out and cracks as you roll it.

Spread on the filling and roll

Spread a thin line of filling along the long edge of each strip and roll it tightly into a log about as thick as your finger. Keep each log no thicker than your thumb; a thick log will steam in the center when coiled and stay doughy.

Coil in the pan

Make a ring with one log in the center of a greased round pan, then connect the other logs at their ends and coil them outward like a snail shell. Leave a fingertip-width gap between the coils; if they are packed tightly, they will push against one another as they bake and the pie may puff up and crack.

Pour on the sauce

Whisk the milk, vegetable oil, and egg, then spoon it over and between the coils. Sprinkle with sesame seeds. Do not pour all the sauce into the center of the pan at once; if it pools there, the coils will not absorb it evenly.

Bake

45 min

Bake in a preheated 190°C / 375°F oven for 45 minutes. It is ready when the top coils are deep golden brown and no sauce remains at the bottom when you tilt the pan. Lift an edge with a spatula and check underneath; the bottom should be browned.

Reminder

The sautéed meat filling must cool completely before it is rolled in the yufka; this cooling time is not included in the recipe time. Hot filling softens the yufka with steam and can tear it as you roll.
