Diced vegetables cook quickly in a pressure cooker in a thick sauce of sugar and vinegar to make this classic chunky British breakfast pickle, eaten with a fork or spoon. As it contains no nuts, it is also a safe option for people with nut allergies.

How to make it?

Prepare the vegetables

Finely dice the zucchini, carrot, cauliflower, onion and apple.

Prepare the sauce

5 min

Mix the vinegar, brown sugar, mustard powder and salt in the pressure cooker and bring to a boil.

Cook the vegetables

12 min

Add the chopped vegetables to the sauce and close the pressure cooker lid. Cook for twelve minutes from when it starts boiling.

Fill the jars

18 min

Release all the steam before opening the lid. Fill sterilized jars with the hot mixture and leave to cool.

Reminder

Do not open the pressure cooker lid until all the steam has been released. Opening it under pressure can cause serious burns.

Düdüklünün buharını tam boşaltmadan kapağı açmaya çalıştım ve sıcak buhar elime geldi, gerçekten canım yandı. Tarif lezzetliydi ama bu uyarıyı daha dikkatli okumam gerekiyormuş, bir dahaki sefere en az 10 dakika bekleyeceğim.

0,75 bardak esmer şeker bana fazla tatlı geldi, yarım bardağa düşürsem sirkeli dengeyi bozar mı, yoksa 1,5 bardak sirke miktarını da mı azaltmalıyım diye merak ediyorum?

12 dakika yerine 18 dakika pişirdim çünkü sebzelerim hâlâ diri kalmıştı, karnabahar özellikle geç yumuşuyor. Bir dahaki sefere karnabaharı biraz daha küçük doğrayacağım, belki 1 santimetrelik parçalar halinde.
