Buko pandan, a refreshing Filipino dessert, is made by chilling strips of young coconut with pandan jelly cubes and cream. It makes a sweet finish for brunch and can be prepared ahead and served cold.

How to make it?

Cook the jelly

Mix the pandan extract and water with the gelatin and bring to a boil.

Chill the jelly until set

Pour the mixture into a shallow mold and chill it in the refrigerator for 40 minutes, until set.

Cut into cubes

Cut the set jelly into cubes.

Mix the ingredients

Mix the young coconut strips, jelly cubes, cream, sugar, and condensed milk in a bowl.

Chill

Chill the mixture in the refrigerator for at least 20 minutes, then serve.

Reminder

Let the hot mixture cool slightly before pouring it into the mold; otherwise, condensation may form in the mold and leave the surface uneven. Allergen: contains milk and dairy products.
