This quick no-cook olive oil mezze is made by softening fine bulgur in hot water for a few minutes, then mixing it with fresh tomatoes, pepper, and olive oil. Serve it with a warm accompaniment at brunch.

How to make it?

Soften the Bulgur

Place the fine bulgur in a bowl and add enough hot water to cover it. Let it stand for 3 minutes, then drain.

Prepare the Vegetables

Grate the tomato and onion, finely chop the green pepper, and chop the mint.

Mix the Spread

Thoroughly mix the drained bulgur, grated tomato and onion, chopped pepper, tomato paste, olive oil, lemon juice, and salt in a bowl.

Rest and Serve

Let the mixture rest for 5 minutes, then sprinkle the chopped mint on top and serve.
