Calabacitas is an everyday Mexican vegetable dish made by sautéing zucchini, fresh corn, and tomatoes with onion, then melting cheese over the top. These three ingredients are native to the region and commonly grown together, giving the dish a natural harmony. The key is to cook the zucchini uncovered over medium-high heat so its liquid evaporates and it stays firm instead of simmering in its own juices.

Prep the vegetables

Halve the zucchini lengthwise, then cut it into 1 cm thick half-moons; thinner slices may fall apart in the pan. Dice the onion and tomatoes into 1 cm pieces, cut the jalapeño into thin rings, and mince the garlic. If using fresh corn on the cob, scrape off the kernels with the back of a knife.

Sauté the onion and pepper

Heat the oil in a wide skillet over medium-high heat. Add the onion and jalapeño and sauté together for 4 minutes, until the onion turns translucent and its edges turn golden. Use a wide skillet; vegetables piled in a narrow pan will steam.

Add the garlic and cumin

Add the garlic and cumin and sauté for 1 minute. Heating cumin in oil releases its aroma; if you leave the dry spice until the end, it can taste dusty on the dish. Move to the next step before it starts to burn.

Char the corn

Add the corn kernels to the skillet and leave them undisturbed for 2 minutes. Stir, then let them sit for 2 more minutes. The kernels should be browned in spots and smell lightly smoky. This browning is the one step that balances the sweetness of calabacitas.

Cook the zucchini and tomatoes

Add the zucchini and diced tomatoes to the skillet. Season with salt and black pepper, and cook uncovered over medium-high heat. The zucchini will first release liquid, then it will evaporate. The dish is ready when the bottom of the pan is dry and the zucchini edges are lightly browned. Pierce a piece with a fork: it should offer slight resistance. If the fork slides in easily, the zucchini is overcooked.

Melt the cheese

Lower the heat. Crumble the cheese over the top with your hands, cover the skillet, and let it sit for 3 minutes. The cheese should be partly melted and soft in places, not fully melted; in calabacitas, cheese is a little surprise between bites, not a sauce. Sprinkle with chopped cilantro and serve hot.

Reminder

Queso fresco bulamadım, taze lor kullandım. Erimiyor ama tuzu dengeledi, jalapeño yerine de bir sivri biber gitti. Mısırı kızartma adımı önemli, taneler hafif kararınca tatlılığı öne çıkıyor. Kabakla domatesi en sonda katmak da sulanmayı önlüyor.
