Bring the sugar and water to a boil over medium heat, then add the boiled peels.
Simmer over low heat for 45–55 minutes, until the peels are translucent and the syrup has thickened. Add the lemon juice.
Transfer to a jar and let cool.
Store in a sealed jar in the refrigerator for up to 3 weeks.
