Spread the sugar in a wide skillet and melt it over medium heat for 8 minutes without stirring; gently swirl the skillet until the caramel is a deep amber color.

Drizzle and Serve

Immediately drizzle a thin stream of caramel over the figs. Garnish with honey and cinnamon, and serve before the caramel hardens.

Reminder

Let the sugar melt without stirring; stirring can cause it to clump and crystallize. As the caramel thickens, it darkens quickly, so remove it from the heat promptly. Allergen: contains tree nuts (hazelnuts).
