A light meze of sautéed grated carrots folded into strained yogurt with garlic and walnuts. Finished with dried mint and olive oil, this easy appetizer is served cold.

Step by Step

How to make it?

1

Cook the carrots

15 min

Sauté the grated carrots in olive oil over medium heat for a few minutes, until softened. Remove from the heat and let them cool until warm.

2

Prepare the yogurt mixture

3 min

Whisk the strained yogurt with the crushed garlic and salt.

3

Combine

5 min

Add the warm carrots to the yogurt mixture and stir gently until smooth and pourable.

4

Serve

3 min

Transfer the carrot tarator to a serving bowl. Sprinkle with chopped walnuts and dried mint, and serve chilled.

Reminder

Important: Let the carrots cool until warm before adding them to the yogurt; hot carrots can cause the yogurt to separate. Allergens: contains dairy and walnuts (tree nuts). Keep refrigerated; the meze stays fresh for 1–2 days.
