Mtabbal is usually associated with eggplant, but Lebanese restaurants also make this version with beets; shawandar means beet. Beets are roasted in their skins, then mashed with tahini, garlic, and lemon. The result is an almost neon-pink dip. Roasting the beets is essential: boiled beets release their sugars into the water, leaving the dip pale and watery.

How to make it?

Roast the beets in foil

Scrub the beets clean and trim the stems, leaving 2 cm, without peeling them. Wrap each beet tightly in foil and roast at 200°C / 390°F. They are ready when a skewer passes through the foil and beet without resistance; large beets may take up to 75 minutes.

Peel and roughly chop

Once the beets are cool enough to handle, rub off the skins with a paper towel; the cooked skins should come off without a knife. Wear gloves, as beet juice stains your hands. Cut the beets into large pieces.

Mash the garlic with salt

Remove the germ from the center of the garlic cloves; it carries a sharp flavor that stands out in a raw dip. Mash the garlic with the salt in a mortar until it forms a paste.

Process the dip

Put the beet pieces, garlic paste, tahini, and lemon juice in a food processor and process until smooth. The tahini will make the mixture stiff at first; the lemon juice and the beets’ own liquid will loosen it. Do not run the processor for too long; if the dip warms up, the tahini may separate.

Finish with olive oil and cumin

Add the olive oil in a thin stream and pulse briefly to combine, then mix in the cumin. Taste the dip: there should be enough lemon to balance the tahini’s bitterness; add another 10 ml if needed. It should be thick enough to sit on a spoon without running off.

Plate the dip

Transfer the dip to a shallow plate and spread it in a spiral from the center outward with the back of a spoon, leaving grooves for the olive oil to collect. Top with coarsely chopped walnuts, chopped mint, and pomegranate arils. Serve warm or at room temperature with pita bread.

Reminder

Roast the beets unpeeled, leaving 2 cm of stem, and wrap them tightly in foil. Beets roasted uncovered will dry out, while peeled beets will release their color and sugars onto the pan. Pancarı folyoda fırınlamak haşlamaktan çok daha iyi, haşlayınca tat suya gidiyor. Pancarı fırından çıkardıktan sonra folyonun içinde soğumaya bıraktım, buharla kabuğu gevşedi ve elle soyuldu.
