This white version of slatko, a Balkan tradition for welcoming guests, is made by slowly simmering leftover cauliflower in syrup and finishing it with rose water. Serve it in small dishes with a glass of cold water.

Combine the sugar and water in a pot and bring to a boil. Once the sugar has dissolved completely, add the drained cauliflower.
Simmer over low heat, stirring occasionally, for 55–60 minutes, until the cauliflower is translucent and the syrup has thickened.
Remove from the heat, add the lemon juice and rose water, and stir. Once cool, transfer to clean jars.
Soak the cauliflower briefly in lemon water before adding it to the syrup; otherwise, it may give off a pungent smell as it cooks. This recipe contains no known major allergens.
