This unusual spoonable preserve is made by coarsely grating celeriac and cooking it in lemon syrup until translucent. Cooking mellows celeriac’s sharp aroma, leaving a sweet, slightly nutty flavor and fine strands with a little bite. Because celeriac is a low-acid vegetable, the recipe uses plenty of lemon juice for balance and keeps the preserve refrigerated.

How to make it?

Peel and grate the celeriac

Use a knife to peel away the thick, soil-covered skin and rootlets. Measure out 500 g of clean white flesh. In a large bowl, add 15 ml of the recipe’s lemon juice to 1 liter of water. As you grate the celeriac on the coarse side of a grater, place it in this water to prevent browning.

Blanch the celeriac

Drain the grated celeriac, blanch it in boiling water for 5 minutes, and drain again. Blanching removes the raw, sharp aroma and softens the strands enough to absorb the syrup.

Cook in the syrup

40 min

Bring the sugar and 250 ml water to a boil. Once the sugar dissolves, add the grated celeriac and lemon zest. Cook over low heat for 35 minutes, stirring occasionally, until the strands turn translucent and the syrup thickens. Add the remaining 75 ml lemon juice. Remove from the heat when the syrup reaches 104–105°C / about 220°F, or when it stays in place on a cold plate instead of spreading.

Fill the jars

10 min

Boil the jars and lids for 10 minutes to sterilize them. Fill the jars while the preserve is hot, leaving 0.5–1 cm of headspace. Wipe the rims with a clean, damp cloth and close the jars. Once cool, refrigerate them.

Reminder

Celeriac is a low-acid vegetable; this preserve is not suitable for pantry storage using a boiling-water bath. Keep it refrigerated and use within 3 weeks. Do not reduce the lemon juice.
