Cook the flour mixture

Kayseri's famous spiced fenugreek spread is made by cooking a mixture of fenugreek, red pepper and garlic with water until thick. Tangy and spicy, it is spread thinly and served at breakfast.

Add the fenugreek, red pepper, Turkish red pepper flakes, cumin, crushed garlic and salt to the lukewarm mixture. Mix thoroughly until it forms a smooth paste.
Transfer the paste to a jar with a lid and refrigerate for at least 2 hours. Resting lets the flavors mingle and softens their sharpness.
Spread in a thin layer and serve.

Kayseri'de yediğim çemenin tadına çok yakın oldu, kırmızı biber ve sarımsak dengesi tam kıvamındaydı.
Baharatları eklerken macun çok kuru göründü, 1 kaşık daha su ilave ettim ve kıvam düzeldi. Sarımsağı biraz fazla kaçırdım galiba ama yine de güzel oldu.
Çemeni tarifte önerilen 2 saat yerine bütün gece buzdolabında dinlendirdim, ertesi sabah tadı belirgin şekilde yoğunlaşmıştı. Ama kıvam biraz fazla katılaşmıştı, birkaç damla su ekleyip açmam gerekti.
