Pizza and Turkish flatbreads
This quick breakfast is made by topping ready-made yufka dough (dough for thin Turkish pastry sheets) with plenty of kashar cheese and eggs, then cooking it in a frying pan. Inspired by the pan-bread tradition of the Kazakh steppe, this recipe offers a pide-like flatbread without waiting for the oven.
Grease a large frying pan with butter and heat over medium heat. Lay the rolled-out yufka dough in the pan.
Spread the grated kashar evenly over the dough and cook for 4 minutes, until the edges begin to puff up.
Crack two eggs into the center of the dough and sprinkle with nigella seeds and salt. Cover and cook for a further 6 minutes.
Once the egg whites have set, take the pan off the heat. Slice the flatbread and serve hot.
Cover the pan: without a lid, the egg will burn underneath before the top cooks. Allergens: contains milk and dairy products (kashar cheese and butter), eggs, and gluten (yufka dough).
