Prepare the Cherries

A Russian classic, varenye is made by layering pitted sour cherries with sugar and briefly cooking them in a pressure cooker. The fruit stays intact, with individual cherries gleaming in syrup. Serve this sweet preserve on a separate plate alongside tea.
Mix the pitted sour cherries with the granulated sugar and lemon juice in the pressure cooker.
Close the pressure cooker and bring it to a boil over medium heat. Once it whistles, cook over low heat for 15 minutes.
Turn off the heat and wait 10 minutes for the pressure to release naturally, then open the lid.
Boil the syrup uncovered for 10 more minutes to thicken it. While hot, fill sterilized jars and turn them upside down to cool.
Do not stir the syrup while boiling it uncovered, or the cherries may be crushed and fall apart; gently shaking the pan is enough to mix it. Cooling the jars upside down creates a tight vacuum seal.
