Chinese chili oil is a spicy condiment made by pouring hot oil infused with garlic and ginger over red pepper flakes, then balancing it with sesame and sugar. It can be stored in a jar and easily packed in a lunchbox.

Add the vegetable oil, garlic, and ginger to a saucepan and heat until it begins to smoke lightly.
Strain the hot oil to remove the garlic and ginger, then slowly pour it over the pepper mixture. Stir until it stops sizzling.
Add the sugar and stir. Transfer to a jar and let it rest at room temperature for at least 2 hours.
Do not let the garlic and ginger burn while heating the oil; burnt bits will make the condiment bitter and harsh. Set the bowl on a heat-safe surface before pouring in the hot oil, as it may splatter. Allergen: contains sesame.
