Chufa horchata is a traditional drink from Valencia, made by soaking tiger nuts in water overnight, then blending and straining them with sugar and cinnamon. A long soak deepens the flavor, so do not rush this step.

How to make it?

Soak the tiger nuts

Soak the tiger nuts in plenty of water overnight, for at least 8 hours.

Blend

Drain the soaked tiger nuts and blend them with fresh water for 3 minutes, until smooth.

Strain

7 min

Strain the mixture through a fine cheesecloth, squeezing the pulp to extract the drink.

Chill and serve

20 min

Mix the strained drink with the sugar and cinnamon, then chill it in the refrigerator for at least 20 minutes before serving.

Reminder

Do not blend the tiger nuts without soaking them overnight; if they are not soft enough, the drink may taste bitter.
