Kadaif with clotted cream is made by layering uncooked clotted cream between two sheets of toasted shredded kadaif. Unlike versions made with milk pudding, the filling is never heated, so the cream keeps its full flavor and aroma; the dessert should be eaten sooner. Pour the syrup over the kadaif before adding the cream, or it may melt and run out.

Make and cool the syrup

Bring the sugar and water to a boil and simmer over low heat for 10 minutes. Add the lemon juice just before removing from the heat. The syrup is ready when the last drop stretches into a thread as it falls from a spoon. Pour it into a wide bowl and let it cool completely.

Butter and loosen the kadaif

Spread the kadaif on a tray, separate any clumps, and cut it into 1-centimeter pieces with scissors. Melt the butter and let it stand for 3 minutes. Drizzle the clarified portion over the strands and rub it in with your hands so every strand is coated.

Divide between two pans

Divide the buttered kadaif evenly between two same-size pans. Spread it out and press firmly with your palms.

Bake

Bake both pans together in a preheated 180°C / 355°F oven for 30 minutes, swapping their positions once halfway through. The strands are done when evenly deep golden brown.

Add the syrup and cool

As soon as the pans come out of the oven, divide the cooled syrup evenly between them and pour it over the kadaif. Let them stand until the sizzling stops, then cool completely. Do not skip this step: the clotted cream will hold its layer only on cold kadaif.

Spread the cream and layer

Take the clotted cream straight from the refrigerator and spread it evenly to the edges of one kadaif layer using the back of a spoon. Lift the kadaif from the second pan in one piece with a wide spatula and place it on top. Press gently with your palms, sprinkle with crushed pistachios, and refrigerate.

Reminder

Let the kadaif cool completely before adding the clotted cream; this cooling time is not included in the recipe duration. Cream added to warm kadaif will melt and release its fat, leaving a greasy layer instead of a white filling.
